YOU WILL NEED:

1-2 CUPS VIOLET BLOSSOMS

1 CUP WATER

1 CUP GRANULATED SUGAR

HEAT-SAFE BOWL

CANNING JARS

SAUCEPAN

STRAINER

FUNNEL

1 Gently pluck the violet petals from the green base of the flower. Discard the base (called the calyx). Place the petals in a heat-safe bowl.

2 With a grown-up's help, bring the water to a boil in a small saucepan.

3 Pour the hot water over the violet petals. Leave to steep for 24 hours.

4 Place the sugar and violet-infused water into a small saucepan. Bring to a simmer and stir until the sugar is dissolved into a syrup.

5 Strain the syrup into canning jars—using a funnel can be helpful. Discard the petals. Allow the syrup to cool.
